Green Banana Flour Bread

This banana bread is moist, flavourful, and gluten-free thanks to the use of green banana flour. It's a great way to enjoy a classic treat with a healthier twist!

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup green banana flour
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 2 large eggs
  • 1/4 cup honey or maple flavoured low-cal sauce
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • Optional add-ins: chopped nuts, chocolate chips, dried fruit

Directions

  1. Preheat your oven to 175°C. Grease or line a loaf pan with parchment paper.
  2. In a large bowl, combine the mashed bananas, melted coconut oil or butter, honey or maple sauce, eggs, and vanilla extract. Mix well until smooth.
  3. In another bowl, whisk together the green banana flour, almond flour, baking powder, baking soda, salt, and cinnamon (if using).
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. If desired, fold in any optional add-ins like chopped nuts, chocolate chips, or dried fruit.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the centre comes out clean or with a few moist crumbs.
  8. Remove from the oven and allow the banana bread to cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely before slicing.
  9. Slice and serve the banana bread plain, or with a spread of butter or nut butter.
