Protein Blondies

This vegan blondie will be your favourite new treat. Try with vanilla flavoured protein to give it the BEST taste! They're quick to bake and are the perfect texture with gooey raspberries that melt in your mouth!

Ingredients

  • 4 scoops NZProtein Pea Isolate protein
  • 1 1/2 c Flour
  • 1t Baking Powder
  • ½ c Coconut sugar
  • Pinch of salt
  • ½ cup peanut butter
  • ⅓ c melted coconut oil
  • 2t vanilla essence
  • 1c milk (I used almond)
  • 3/4c frozen raspberries

Directions

  • Preheat oven to 180oC and line a square 9x9 loaf tin with baking paper.
  • In a large bowl, mix the dry ingredients together until combined.
  • In a separate bowl, melt the coconut oil and add in the rest of the wet ingredients.
  • Once mixed well, add the wet to the dry ingredients and combine.
  • Stir in the berries until evenly distributed.
  • Pour the batter into the baking tin.
  • Bake for 25mins until golden brown.
  • Cool for 30mins before cutting and serving!
