These high protein muffins use bananas, almond flour, and protein powder of your choice.
Ingredients
- 2 cups almond flour
- 1/2 cup vanilla protein powder
- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup coconut oil, melted
- 1/4 cup low cal sauce (maple syrup flavour)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
- Optional: chopped nuts or dark chocolate chips for topping
Directions
- Preheat your oven to 175°C. Line a muffin tin with paper liners or grease it with coconut oil.
- In a large mixing bowl, combine almond flour, protein powder, baking powder, cinnamon, and salt.
- In another bowl, whisk together mashed bananas, eggs, melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- If desired, sprinkle chopped nuts or dark chocolate chips on top of the batter.
- Bake for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
