Do you love muffins? How about a freshly-baked, chocolatey, fluffy muffin that’s healthy AND satisfying? These scrumptious paleo chocolate muffins are so simple to bake and will be ready to eat in less than 30 minutes. Win!
Ingredients
- 2 Scoops NZProtein Beef protein
- 1/3c Coconut flour
- 2T Cocao powder
- 1t Cinnamon
- 3/4t Baking soda
- 3/4t Baking powder
- ¼t Salt
- 1/3c Nut or seed butter (I used chocolate hazelnut butter)
- 3 Bananas, mashed
- 3 Eggs
- 1/4c Coconut oil, melted
- 1t Vanilla essence
- 1/2c Dark chocolate chips
Directions
- Preheat the oven to 180oc and line grease a muffin tray.
- In a bowl, mix coconut flour, protein powder, cocoa powder, salt, baking soda, baking powder and cinnamon.
- In a high speed blender, blitz together the nut/seed butter, bananas, eggs, coconut oil and vanilla until smooth.
- Pour the wet ingredients into the bowl and mix together until no lumps remain.
- Add in the chocolate chips and stir through.
- Pour the batter evenly into the muffin tray.
- Bake for 20mins or until once poked, a skewer comes out clean. Enjoy!
