Green Banana Flour Pancakes

Ingredients

  • 1 cup green banana flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk (dairy or plant-based)
  • 2 large eggs
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil for cooking

Directions

  1. In a mixing bowl whisk together the green banana flour, baking powder, and salt.
  2. In another bowl whisk together the milk, eggs, melted butter or oil, and vanilla extract (if using).
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if there are some lumps; avoid overmixing.
  4. Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  7. Remove from the skillet and keep warm while you cook the remaining pancakes. You can adjust the heat as needed to prevent burning.
  8. Serve the pancakes warm with your favourite toppings such as maple syrup, fresh fruit, or yogurt.

Note: Green banana flour tends to absorb more liquid than wheat flour, so the batter may be thicker. If it's too thick for your liking, you can adjust by adding a bit more milk until you reach the desired consistency.
